The family farm Ixtlan is small, just two hectares, situated near the village of Tatti. On the farm there are around eighty olive trees, some fruit trees, an organic vegetable garden and a field of saffron.

The oil that we produce comes from our own olives; they are not certified, but they can be considered organic in all respects. It is a typical Tuscan olive oil: green and full of flavour.
In the vegetable garden we employ growing methods designed to waste as little water as possible and do not use any chemical products. For this reason we aim at using seeds of ancient varieties and native species. Our cultivation method is inspired by the principles of synergistic agriculture.
We have been growing saffron since 2013 (about 9000 bulbs). The flowers are hand-picked around the end of October, early in the morning, before they open, entirely by hand. Their stigmas are extracted and dried straight away in a special low temperature oven. We package them whole to keep their aroma intact.
We use a natural bread starter (mother dough) and flour from ancient grains. The bread is baked in our wood-fired oven.
